FREGOLA SARDA SALAD
I'm so back blogged that let's pretend this is still the last week of August and I'm still holidaying in Sardinia and my gracious hostess (YES, with the mostest) Chiara made this delicious dish for me. Fregola Sarda is made of Durum wheat semolina and looks a bit like cous cous but rounder and much bigger and the taste is softer...it is also very pretty and reminds me of little pearls.
It is very easy to make: Boil the Fregola for about 40 minutes in abundant water - add lots of chopped basil, parsley, mint and zest and lemon juice - extra virgin oil - crushed garlic - capers. Needless to say, to be eaten on a terrace overlooking the Mediterranean.
